The thing I like the best about this recipe is that it’s lacto-ovo vegatarian, but it can be just paleo or keto by adding breakfast sausage or whatever you like to make this a high protein, hardy meal.

I’m the first to admit that I get sick of even thinking about eggs when I’m eating low-carb. When I found this recipe I was in heaven. It’s easiest if you purchase store bought guacamole and pico, but if you love making your own, by all means, homemade!
